I have a bunch of dill leftover from the Strawberry Cucumber Sandwiches and was inspired to create a new recipe. It turned out to be a refreshing and tasty afternoon snack. And since all the ingredients are healthy you can feel good about snacking. My son and I ate this with whole wheat tortilla chips but it would also be great with toasted pita bread.
Cucumber Dill Yogurt Dip
- Approximately 1/2 cup of plain yogurt
- Half of an English cucumber, peeled, seeded and chopped
- 1/2 cup of fresh dill, minced
- 2 pinches of coarse salt (to taste)
Mix all the ingredients and serve with tortilla chips or pita bread.
