We’re all busy, right? Homemade is best but sometimes you need a recipe that is quick, easy and impressive. This is that recipe. It’s quick because you just pimp a yellow cake mix but this time it’s worth it. Although I don’t really like eggnog as a drink this cake is really good. It’s from the side of Hood’s Golden EggNog carton and when I want to make my husband and kids happy I make this cake. They like it so much that I only got one chance to take a photo of the cake.

EggNog Cake

(from Hood)

  • 1 – 18.25 oz. pudding added yellow cake mix
  • vegetable oil (according to package directions)
  • eggs (according to package directions)
  • 1 tsp nutmeg
  • Hood Golden EggNog, substituted for water (according to package directions)

Preheat oven to recommended temperature on cake mix package. Spray sides and bottom of a Bundt pan with vegetable cooking spray, or grease with butter or margarine. Combine dry cake mix with required oil, eggs and nutmeg. Omit water adding the same amount of Hood Golden EggNog in its place. Mix and bake according to package instructions. Cool. Top with EggNog Glaze.

EggNog Glaze

  • 2 cups confectioners’ sugar
  • 2 Tbsp butter, softened
  • 1 tsp vanilla
  • 3 tsp Hood Golden EggNog

In a medium bowl combine all ingredients, adding enough EggNog for desired consistency.
