I’ve made this recipe for many years. Usually during Christmas as cookies to give away at my office. The kids especially like these with a marshmallow pressed into the cookies immediately after you take them out of the oven. Since this batch was being given to the lawyer at my office for the February installment of Cookie-of-the-Month I made some with whole walnuts and some plain. These are like brownies in the form of a cookie. I was happy to bring the majority of this batch to work because I would end up eating most of them myself.
Soft & Chewy Chocolate Bites
(from Kraft Food & Family magazine – holiday 2006)
- 4 squares Baker’s Unsweetened Baking Chocolate
- 3/4 cup (1 1/2 sticks) unsalted butter
- 2 cups sugar
- 3 eggs
- 1 tsp vanilla
- 2 cups flour
Microwave chocolate and butter in large microwaveable bowl on high 2 min. or until butter is melted. (Be careful with this step if you have a high power microwave. After 1 min. 30 sec. the butter exploded in my microwave and made a big mess.)
Stir until the chocolate is completely melted. Stir in sugar. The chocolate and the sugar will look gritty like coffee grinds. Mix in eggs and vanilla. Add flour; mix well. Refrigerate 15 minutes or until dough is easy to handle.
Preheat oven to 350 degrees F. Shape dough into 1-inch balls; place 2 inches apart on greased baking sheets. (Or line baking sheets with parchment paper.) Bake 7-8 minutes or until set (do not over-bake). If you want to embellish the cookies with a marshmallow, or nut press them into the cookie as soon as you take them out of the oven. Let stand on baking sheet 1 minute before transferring to wire racks to cool completely.
These are very chocolaty so be prepared with a cold glass of milk.
