I’m reposting this recipe for Grilled Sweet Potatoes with Honey-Lime Ginger Dressing because I am entering this recipe in a contest with North Carolina Sweet Potatoes’ Blogger Recipe Contest. Now that the snow is melting I’m anticipating taking out our grill so we can start cooking outside. I was watching my neighbor last weekend grill out in his t-shirt with envy. This recipe is one of the first things that I’m going to make. I can’t wait.

I’m tired of the same old side dishes when we grill for dinner. We usually have corn and baked potatoes. Tonight I decided to try something new at least for myself. Part of the reason that I’m doing this project is that I get bored of cooking the same things over and over. I had a sweet potato and I knew I wanted to grill it so I did a quick search on the interweb and was inspired by this recipe at Bitchin Camero.
Grilled Sweet Potatoes with Honey-Lime Ginger Dressing
- 1 sweet potato, peeled and cut into 1/2 inch slices (cook several potatoes to serve more than one person)
- juice from half a lime
- 1 tsp grated fresh ginger
- 1 tsp honey
- ground chipotle chili pepper
- fresh ground pepper
- kosher salt
- chopped cilantro for garnish
Whisk together the lime juice, ginger, honey and fresh ground pepper for the dressing and set aside.

This sounds great. I’m always reaching for maple or molasses with sweet potatoes. This will get me out of that rut.
Those potatoes look AMAZING! I would enter them in a contest too if I were you. I have never grilled sweet potatoes and the weather here is actually beautifully warm so I think I might give it a go tonight. Have a great week Janna.
