How I love blueberry season and it’s in full swing here in Massachusetts. I am also a big fan of Greek yogurt. This recipe combines the goodness of yogurt with fresh berries and cools you off in the process.

Blueberry Yogurt Pops

  • 1 pint blueberries
  • 1/2 cup sugar
  • 1 cup vanilla Greek yogurt

Simmer blueberries with sugar in a medium saucepan until the blueberries look soft and the sugar is dissolved.

Allow to cool for about 10 minutes and then use an immersion blender or standard blender to blend the sauce into a uniform mixture. Be careful if you are using an immersion blender because the sauce is still  hot and blueberries will stain clothes if you get splashed. Fold in the yogurt and freeze in ice pop molds.

My son and I both rate this recipe  4 stars. My daughter was excited to try these but didn’t like the tartness of the yogurt. She has a definite sweet tooth. Though she posed in the photo she didn’t finish her yogurt pop. The beauty of this recipe is that you can adjust the amount of sugar you use depending on how sweet the blueberries are.
