I can’t resist brownies and I feel terrible when someone who also finds brownies irresistible can’t partake. My sister-in-law loves brownies too and has gluten intolerance so when I found this recipe I immediately thought of her. This recipe is wonderful because it doesn’t require any specialty ingredients but are so delicious that no one will care that they are gluten free except for my sister-in-law.
Gluten Free Fudge Brownies
- 6 tablespoons unsalted butter, cut into pieces
- 1/3 cup cornstarch
- 1/4 cup cocoa powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 9 ounces bittersweet chocolate, chopped
- 1 cup sugar
- 1 teaspoon vanilla
- 3 large eggs
Preheat oven to 350°F. Grease an 8-inch square baking pan with butter or coconut oil. In a small bowl, whisk together the corn starch, cocoa powder, cinnamon and salt. In a large microwavable bowl, heat the butter and chocolate in the microwave for 30-second increments stirring between until melted. Stir the sugar and vanilla into the butter/chocolate mixture. Add eggs, mixing each one at a time until combined. Add the dry ingredients and mix until smooth. Pour into the prepared pan and bake for 35 minutes. Test for doneness with a toothpick. Cool in pan on wire rack. Cut into 16 squares.
These are very fudgy and chocolaty brownies. A cold glass of milk is definitely required.
