Scones are a favorite at our house. I have been buying bakery scones every week and my kids eat them for breakfast and snacks. This recipe is a basic one from the Better Homes & Garden cookbook that I’ve tweaked to transform it into a healthier one. Several iterations of the recipe were tested by my kid-crew and their feedback was that they were not sweet enough. Since I’m using maple sugar in the recipe there are a couple options to increase the allure for picky eaters; coat with some coconut milk and sprinkle with sugar prior to baking or drizzle with frosting afterwards. If I’m baking these just for myself I cut back on the maple sugar and add chopped nuts and dried fruit.
Peppermint Matcha Chocolate Chip Scones
- 2 cups white whole wheat flour
- 4 tablespoons maple sugar (or coconut palm sugar)
- 1 tablespoon baking powder
- 1 teaspoon green tea Matcha powder (optional)
- contents of 1 bag of peppermint tea
- 2 tablespoons ground flaxseed
- 1/2 cup coconut oil
- 1/2 cup mini chocolate chips
- 1 beaten egg
- 1/2 cup + 2 tablespoons unsweetened coconut milk beverage
- 2 teaspoons granulated sugar
Preheat oven to 400°F. Combine flour, maple sugar, baking powder, matcha powder, and contents of peppermint tea bag in a large bowl. Add coconut oil and cut into the flour mixture until it resembles large crumbs. Stir in the chocolate chips. In another bowl whisk together the egg and 1/2 cup of coconut milk; add to dry mixture. Stir until fully incorporated. Knead dough until nearly smooth. Shape scones into 12 large triangles and place on a lined baking sheet. Brush tops with the additional coconut milk; sprinkle with granulated sugar. Bake for 12 to 15 minutes. Cool on wire rack.
These are best served warm from the oven but you can also toast in a toaster oven for the same delicious effect.
My family balks at the use of whole wheat flour in recipes and are less likely to try something if they suspect that whole wheat flour has been used. That’s why I’m using white whole wheat flour here and added the matcha powder for a bit of a green hue. You could also add a tablespoon of cocoa powder for double-chocolate yumminess.
One important thing about getting picky eaters to try new foods is to consider presentation. Don’t hide away something healthy in a covered container. Stack them up on a plate, cover and leave them front and center on the counter. If it’s in view, my kids are more likely to grab a healthy food instead of searching for the cookies hidden in the pantry.
