My daughter has been requesting that we try making our own potato chips for quite some time. It has taken me a while to fulfill her request because I was reluctant to fry thinly sliced potatoes in order to achieve the same result as the Lay’s chips that she loves. Also, I have been collecting many pounds of potatoes at the CSA and I needed something new to make with them. We’ve been eating potatoes as a side dish with almost every meal. This recipe is a perfectly quick way to satisfy a chip craving. There are many variations out there but these instructions gave me great results.

Microwave Potato Chips

  • 1-2 potatoes, sliced thinly with a mandoline
  • olive oil, in a spray bottle
  • sea salt (or ground pepper)

Line a microwave-safe plate with parchment paper. Spray the parchment paper lightly with olive oil then place a single layer of potato slices on top. Spray the potatoes lightly with olive oil and sprinkle with sea salt (or ground pepper). Microwave on high for 4-5 minutes.  Repeat with remaining potato slices using the same plate and parchment paper. Serve after allowing to cool briefly.

I thought these chips were very good and I especially liked them warm. I rate this recipe  5 stars. My daughter tried one and her comments were that they were not crisp enough. Despite that she rates this recipe  3 stars. I’m rather excited about putting together my own flavors like chili or cayenne pepper. Sea salt and pepper were also excellent.
